Virtual Christmas Cookie Swap

By the end of the week, we will have exchanged many new recipes. Print them for later or come back and check them out when you're ready to bake.

Snowball Cookies

1 cup butter, softened
¼ cup sifted powdered sugar
2 teaspoons vanilla extract
1 tablespoon water
2 cups all-purpose flour
1 cup chopped pecans

Cream butter and sugar in large bowl of electric mixer. Blend in vanilla and water; add flour and mix well. Stir in nuts. Shape into small balls (use ½ teaspoon measuring spoon). Bake on ungreased baking sheet at 300 degrees for 20 minutes. Cool thoroughly on pans. When completely cool, dip in frosting and roll in coconut. Freezes well. Yield: about 4 dozen, depending on size.

Frosting
4 cups sifted powdered sugar
½ cup milk or cream
½ teaspoon vanilla or almond extract
Dash salt
Gradually add milk to powdered sugar, blending until smooth. Stir in vanilla and salt. Dip cooled cookies in frosting, then roll in coconut.

    Cream together:
    1 cup sugar
    1/2 cup soft butter
    1 tsp vanilla
    In a separate bowl mix together:
    2/3 cup flour
    1 tsp baking powder
    1/4 tsp salt
    1 cup nuts
    1 cup cut up dates
    1/2 cup candied cherries
    Combine flour mixture with creamed mixture.
    Spread in 13x9 pan, bake at 325 for 28 minutes.
    After cooling cut into bars and place each bar in granulated sugar to coat.

  2. Date-Nut Pinwheels from Carol Ann Methvin

    1 (8 oz.) pkg. pitted dates, chopped
    1 c. sugar
    1 c. hot water
    1 c. finely chopped walnuts
    1 c. butter, softened
    2 c. firmly packed brown sugar
    2 eggs
    1 t. vanilla extract
    3 1/2 c. all-purpose flour
    1/2 t. baking soda
    1/2 t. cream of tartar
    1/2 t. salt

    Combine dates, sugar and water in a medium saucepan; cook over medium heat, stirring constantly, about 6 to 8 minutes or until mixture thickens. Remove from heat; stir in walnuts. Let cool completely
    Cream butter in a large mixing bowl; gradually add brown sugar, beating well. Add eggs; beat well. Stir in vanilla.
    Combine flour, soda, cream of tartar and salt in a medium mixing bowl; add to creamed mixture, stirring well.
    Divide dough into thirds. Roll each portion into a 12-inch square on separate sheets of wax paper; spread each square with one third of reserved date mixture. Lifting up edge of wax paper, gently peel off dough, and roll up jellyroll fashion, beginning with long end. Wrap rolls in wax paper, and chill overnight. Remove wax paper. Cut into 1/4-inch slices, and place 2 inches apart on greased cookie sheets. Bake at 350 degrees for 8 to 10 minutes. Remove to wire racks to cool. Store in airtight containers. Yield: about six dozen cookies.

  3. My favorite recipe is already posted...the date-nut pinwheels. It was a recipe my mom made every year and it turns out it is one of the few cookie recipes Jim likes.(He's not a big sweet eater...can you believe it???) So I'll be busy making a batch next week before Kristi and Michael come to visit.
